Recently, I was diagnosed as pre-diabetic with a condition called hypoglycemia, a condition in which the body’s blood sugar goes lower than the standard range. Sugar and glucose provide energy to the body, so when they are too low, they can be detrimental to health and affect daily activities. With hypoglycemia, I have to follow a strict diet that includes not eating sugar. As someone with a sweet tooth, following this has been hard, but I have found ways to work around it.
One of my favorite sweets is chocolate fudge, which I have been craving since my diagnosis. So, I did what someone who enjoys baking would do and found a recipe for sugar-free fudge. So, without further ado, here is my favorite low-sugar fudge recipe, which is easy to make when craving a sweet treat.
INGREDIENTS
- One cup of unsalted butter (softened at room temperature)
- ¼ cup powdered monk fruit sweetener*
- ¼ cup unsweetened cocoa powder*
- One tsp vanilla extract
- ⅛ tsp sea salt
- ¼ cup dark chocolate chips*
- Coarse sea salt flakes (sprinkled on top and used for flavoring and garnish)
*Ingredients are explicitly used to make the recipe with less sugar so it is low on the glycemic index
INSTRUCTIONS
- Line a glass container with parchment paper so that the paper hangs over the sides.
- In a medium bowl, beat the butter and alternate sugar until fluffy. Use a handheld mixer or stand mixer.
- Beat in the cocoa powder, vanilla extract, and sea salt
- Melt the chocolate chips and beat into the other ingredients
- Transfer the mixture to the glass container, smooth the surface with a spatula, and sprinkle with salt. (If desired, sprinkle any other spice with the salt to add flavoring. I added chai spice to my batch)
- Refrigerate for at least an hour or until solid
- Remove the fudge from the container by lifting the parchment paper and cut into cubes.
*Keep the fudge refrigerated until right before eating. You can also freeze it. Leaving it out will cause the fudge to melt and expire sooner.
Last but not least, enjoy your delicious treats. You deserve it! Keep them in the fridge or freezer for the most extended shelf life. This simple and quick recipe is one of my favorite low-sugar sweet treats to satisfy that craving!
